"This is how I like to roast chicken.
Preheat oven to 500+
Cut up vegetables in a bowl (brussel sprouts, kabucha squash, whole garlic, shallots, portabellos, turnips, carrots, zucchini, etc) toss with Coconut oil, thyme and S&P put on a 1/2 sheet pan.
Cut up a whole chicken into legs, thighs, wings, breast cut in 1/2 on the bone. DRY on a paper towel! Place on veg with space in between. Skin UP!! Chicken cooks best if it is closer to room temp.
Melt some butter (Kerrygold or other grass fed) with garlic, thyme S&P and brush skin with it. Sprinkle skin with S&P.
Cook for about 35- 45 min, don't keep peeking, it needs to be HOT!"
